Nice link btw It's because of practicality. Horses were mostly used as a labour animal. You don't want to over burden the horse. Pigs simply did not produce milk in great quantity. Cows were the most ideal animal for the task. They did nothing all day, you milked them till they fattened up, then ate them. Such a convenient animal.

Never do I see some woman with huge boobs and guilt trip myself from looking thinking "OH DEAR LORD, THOSE THINGS COULD SECRETE AT ANY MOMENT!" Not that that would stop me either way, but drinking milk as a source of food is a pretty innocent thing to do. It's only nasty if you want it to be.
