Probably because frozen cake isn't that good. It would only work well if you assemble an ice cake yourself and use unfrozen cake as part of it. But anything you'd buy in a store would be frozen in it's entirety.

It's cannibalism if it's the same species of cake, not otherwise. So for example, a lemon cake would still be cannibalism, since you just replace oranges with lemons, it's the same species. But a Schwarzwälder Kirschtorte wouldn't be, because that's a different species of cake.

How do you tell what cakes are in the different species...
Looking at the recipe would be the best way, probably. If they only differ in one ingredient, or vary only slightly in amounts (using relative measures*), they're probably the same species. And of course same species of cake are born at the same temperature.
Another thing you could look at is whether they can reproduce. For example if you have a a chocolate cake and a plain vanilla cake of the same species, they can reproduce to make a marbled cake. But trying to cross a Schwarzwälder Kirschtorte with a fairy cake would just end in disaster.

*) doubling the amount doesn't change the species of cake of course, it just makes it bigger. But, say, if you only doubled the amount of flour, well, you wouldn't even end up with a cake anymore, really.
