I remember buying the version of Alien that included the alternate(deleted) scenes. Not really much extra, aside from Ripley finding Captain Dallas(played by Tom Skerritt) all webbed/gooed up against the bulkhead. I saw Alien in the theatre when it first came out. No doubt the "chest-bursting" scene is not something to watch while eating nachos and cheese -this film is very grim and melancholy, when it's not scary and suspenseful, which I thought set up the sequel(which is more fast paced and action-oriented). As for Sigourney Weaver as an ass-kicking heroine you'll get no argument from me about that as she showed remarkable guts in her battle against this hideous, violent alien species :)
