Never had this but it sounds tasty.

It is quite tasty and not too difficult, either. Carol bakes the potatoes and once baked, she removes the potatoes from the skin, but leaves a small 'ring' of potato in the skin for the reability to restuff. She mases the potatoes and stirs in sour cream and the shrimp and then stuffs that mixture back in the potato skin and sprinkles shredded cheese over the potatoes and pops them back in the oven for 20 minutes, to reheat the mashed potatoes and melt the cheese.

We didn't have squash, instead we had sclied avacado and slicde tomatoes.

"Mases"...? What does that mean? heyo

From your description of your roommate's culinary capabilities, I'd say you're in the catbird's seat. I wish I had someone that skilled in the kitchen to cook for me sometimes. tongue-1

I feel very fortunate that Carol loves to cook and bake, sure makes dinner more interesting. She's more experimental when it comes to cooking or baking, whereas, I am more apt to stick with the tried and true recipes....in other words, boring. ;)

My girlfriend "Gloria" is an okay cook-not great mind you but she's better than average. Of course I always compliment any meal she prepares for me, and I have never made any disparaging remarks about something she's prepared that I didn't like. Besides not wanting to hurt her feelings I also fear she might throw one of her frying pans at me. tongue-1

lol3 Carol is often amazed that I will eat anything she makes and not complain, but I always tell her, if I'm going to complain, then I should make it myself. She is a very good cook, she did attempt to make me cajun catfish, once and that didn't turn out so well, but she wasn't able to use fresh catfish and instead, had to use frozen....I think that made the difference.

I have been eating less-I always eat less in the summer.

Hotter weather=Packmule drinks more fluids=Packmule eats less=I usually drop about 10 lbs every summer. This summer I plan on keeping the weight off and losing another 10 lbs through lots of walking and bi-cycling. thumbs up

Most people I talk with say they tend to lose weight in the Summer and if they put any on, it's during the winter months.....I seem to be just the opposite! I don't think I eat any more in the summer months than I do in the winter months, but I always seem to drop my weight in the winter. eh?

During the summer I do:

-drink more water, and limit my fluid intake to water, juice, and tea
-eat a little more fruit
-pace myself at work a little more, and take more frequent water breaks
-take cold and/or tepid showers
-eat less
-wear shorts a lot
-take an occasional salt tablet, though not often
-use Gold Bond powder to minimize perspiration that has caused me rashes in the past, and in the worst places freak out
-get more frequent tension headaches, which my doc believes is related to my muscle strain(neck and back) in combination with dehydration
-keep an ample supply of Goody's or Stanback headache powders in my knapsack(which I take to work daily). These powders are effective at stopping my tension headaches. So is my girlfriend, Gloria(via massage), but, unfortunately for me, I cannot take her with me to work everyday tongue-1
-keep several cans of Deet(mosquito repellent) in the work truck
-keep several cans of wasp/hornet spray in the work truck

In the summer I don't:

-drink very much coffee or other various hot drinks
-wear long sleeve shirts very often, if at all
-drink any diuretics, such as Coke or Pepsi

In the Summer....

-I tend to drink even more water than my normal intake.
-I spend as much time sitting in front of an AC as possible.
-I barricade myself from the great outdoors and the bugs and spiders!
-I also use powder a lot more than I do in the winter....rashes in certain areas can be downright painful and annoying!
-I count the days until Autumn and cooler temps.

Lee, working in the great outdoors, do you have to worry about ticks and Lyme disease?

Yes, it's something to be aware of. I've had a few ticks here and there, though not recently. What I worry about more are snakes(copperheads) and wasps, especially "yellow jackets". freak out

I have a very dear friend that a few years ago was in bad shape. SHe'd lost all interest in daily life and was quite ill and finally, she landed in the hospital and they discovered she had Lyme's disease!

Back when I was a kid, on the side of the river I live on, it was copperheads that folks had to worry about and on the other side, it was the rattle snakes. Then, in 1972, Hurricane Agnes devestated this area and as a result we have both kids of snakes on both sides of the river.

Both copperheads and rattlers are fairly aggressive. I have never seen a rattle snake in the wilds, or during my career working outside, which is nearly twelve years now. I do run across small copperheads from time to time, mostly in the 6"-10" range. The biggest one I ever encountered doing landscaping work was probably about a foot long-they're still aggressive, and instinctively snap at anything that moves close to them. The largest snake I ever encountered working as a landscape crew foreman would be a black garden snake from last year, that was a little over two feet long. It was not aggressive but did try to bite when I picked it up, with gloves on. I held it behind its head and by its tail and placed it in some nearby ivy where we would not be working that day.

Back several years ago, I fell into a small nest of copperheads. It was in some tall grass and I'd fallen from a concrete barrier.....my brothers and I were playing ball and it was about a 7 or 8 foot drop, so I was trying to prepare for the landing and I hit and rolled. The little buggers all snapped and I rolled the other way, thankfully, no bite and the mom wasn't arround. That was the closest I ever came to a snake bite. I've been in the woods before and I'm pleased to say, no rattlesnake encounters, either.

While mowing my great-Uncle and great-Aunts lawn once, I was near their birn barrle and thought there was a large piece of rubber tubing near the barrel, I bent down to move it aside and the thing jerked and I jumped back, I wasn't sure how long it was, as it kept going and going.....later, my Uncle ran across it when he was out to the barrel burnign some items and it was 4 feet long, he estimated. When my Grandma and Granddad were still alive, they lived in this old house and in the Summer, Dad was there to mow for them and he watched this huge black snake come from underneath the siding and somehow, got across the road and went into the cemetery across the road. Dad said he never told Grandma, as she'd have insisted on moving, immediately! :)

I have had few unpleasant encounters with critters while in the landscape industry, and I certainly feel very fortunate about that. thumbs up

One side effect of the heat, working in it, that is, is the occasional sudden upset stomach. It comes on without warning, usually about once a month-it rarely makes me want to barf but I usually take some Alka Seltzer or a tablespoon of Pepto Bismol. It happens about every 3-4 weeks, but fortunately never lasts too long.

An upset stomach really stops me in my tracks. I hate to be sick, anyway, so usually when that feeling comes over me, I become totally still, until the feeling passes. freak out

Last night, I made a simple, but tasty meal and somehow stuffed myself without realizing it. We had chicken tenders, mashed potatoes and zuchinni/squash that I steamed.

Not sure what we'll have, tonight, Carol is wroking today for OT and Mom did invite us up for a cook-out, tonight, but Mom can never be counted on 100% in the feeding us department, I may call her in a bit and changes will have been made. shocking

Thanks, although I must admit, Carol is much better at making something out of nothing, than I am. :)

We did go to Mom's, last night! Jim made steaks on the grill for the adults and hot dogs for the kids, but get this....the kids don't like their dogs grilled, he put them on a pan on the grill to boil. cheeky sick smiley Carol and I took a nice large tossed salad and we also had baked potatoes and baked beans. The one nice thing about this house that they moved to, last year....it has an enormous yard and it's nice and level, so we sat out on the back patio and enjoyed a very pleasant Summer meal.

I adore grilled hot dogs, but then, I like 'em almost burnt. tongue and cheek Not quite burnt, but damn close. I don't even eat mustard on them, when they're like that. Boiled dogs kind of gag me a wee bit. cheeky sick smiley

My toaster oven + a regular supply of hot dogs in my fridge = Packmule will burn a couple of franks and try them out, without topping and/or with ketchup. I like ketchup on hot dogs, and rarely eat any wiener without the stuff. tongue-1

I always used to eat ketchup on my dogs, along with mustard, but then got into the habit of no ketchup. I also love chopped onions and occasionally relish on my dogs, but it has to be my Grandma's homemade relish or I pass....hers is the tastiest, ever! groink!

On rare occasions, I get a banana milk at gas stations.

I drink that banana(and strawberry) flavored milk sometimes as well. I can't drink too much of it though, or I feel bloated.

My favorite is hot sauce
When it comes to hot sauce I usually use Texas Pete(my personal favorite) or Louisiana Hot Sauce. I enjoy these hot sauces mostly on fried chicken, chicken wings, steaks, or pork chops.
